Oil-Free Salad Dressing: Avocado Green Goddess

Oil-Free Salad Dressings are a great way to keep your salads from crossing the line from healthy to "worse than a big mac." Notice I didn't say "fat-free" but oil-free. These dressings use oil alternatives to create richly flavored salads. This means avocado, nut/seed butters or greek yogurt. One of my main soapboxes is labled "No Processed Foods." Grocery store Salad dressing is firmly on that box.
I recommend a hand blender (immersion blender) to make these types of dressings. It's easier than breaking out the food processor and will give you a smooth, creamy consistency. The second one in the series is Avocado Green Goddess. Typically, Green Goddess dressing have a lot of mayo, olive oil and tons of fresh herbs. Very tasty but maybe not the healthiest choice. Instead of mayo and olive oil, I use fresh avocado to make it creamy and luscious.
Avocado Green Goddess
Ingredients:
1/2 avocado, seed and skin removed
1/2 lemon, juiced
1/2 lime, juiced
1 clove garlic, grated
1 tablespoon shallots, minced
1/2 cup fresh herb leaves; including tarragon, basil, cilantro and parsley
1/8 cup water
Directions:
Place all the ingredients in a tall, thin container such as a wide-mouthed, pint mason jar.
Season with salt and black pepper. Use the immersion blender to combine to a smooth consistency, adding more water as needed.
Season to taste with more salt and lemon juice if needed.
