Oil-Free Salad Dressing: Lemon Tahini

Oil-Free Salad Dressings are a great way to keep your salads from crossing the line from healthy to "worse than a big mac." Notice I didn't say "fat-free" but oil-free. These dressings use oil alternatives to create a richly flavored salad. This means avocado, nut butters or greek yogurt. One of my main soapboxes is labled "No Processed Foods."
I recommend a hand blender (immersion blender) to make these types of dressings. It's easier than breaking out the food processor and will give you a smooth, creamy consistency. The first one here is a Lemon Tahini Dressing. It works as a great "Faux Caesar" Dressing as well. Garlicky, lemony and creamy - delicious on raw and grilled veggies alike!
Lemon Tahini Dressing
Ingredients:
1/2 cup Tahini (sesame paste)
1 lemon, juiced
1/2 teaspoon capers
1 clove garlic, grated
1/4 cup water
Directions:
Place all the ingredients in a tall, thin container such as a wide-mouthed, pint mason jar.
Season with salt and black pepper. Use the immersion blender to combine to a smooth consistency, adding more water as needed.
Season to taste with more salt and lemon juice if needed.
